Sparkling Strawberry Soda

I gave up soda and diet soda years ago. My hubs however, wasn't too thrilled about that idea. See, he likes his soda pop. He may give it up  one day but until then, I decided I should make him a "cleaner" or "less bad" version of it. I came up with this idea at Sam's club today while I was shopping for our 4th of July party. It's perfect for the heat and it's RED, perfect for this weekend. Wish I would have bought a couple blueberries for garnish!
Sparkling Strawberry Soda
Sparkling mineral water (chilled)
3 parts strawberry juice
1 part agave syrup
The juice of 1 lime
Juice about 10 strawberries and a lime. Should yield just over a cup. Add a 1/4 cup of agave syrup and stir together. Fill a cup with ice and fill 3/4 of the way with sparking water. Add enough strawberry syrup until it's at your desired sweetness. Garnish with lime and enjoy!
P.s. My kids loved it! This is certainly not a health drink BUT compared to a cola, there is no high-fructose corn syrup, fake food colorings, or additives. So refreshing and full of fresh real flavor.

My hubs was kind enough to pick up this juicer for me at Aldi's a while back. Very affordable for around $30.
I used chilled Pellegrino Sparkling Mineral Water and Organic Agave ( I prefer the mild taste as opposed to honey. Organic raw honey has health benefits and is a better choice.)
I used a lime and a peppermint leaf from my plant as a garnish.

The Kombucha Project

This past year, I've been obsessed with the fizzy-sour and slightly sweet taste of kombucha; a fermented tea full of nutritional benefits. If you've ever picked up a bottle at Wholefoods or a health food store, then you're familiar with the $3.29 and upwards price tag. After a year of obsession, it became evident (to the powers that be) my habit was fiscally out of control! I watched some YouTubes, read some articles, and dove right into the art of brewing. I even found a brewing buddy on Facebook, and she gave me great tips! Thank you, Amy Thorpe.

My notes are packed with tidbits of golden knowledge that will spare you from the noob mistakes I made. If you're like me and get overly excited about trying new things, it can backfire while brewing. This delicate art requires the right temperatures, accurate pH levels, suitable materials, etc. Seriously consider exchanging your apron for a lab coat and follow the directions carefully so you don't end up throwing out 4 batches, as I did!

Half-gallon size wide mouth mason jar. I bought a 6 pack at Walmart for about $11.00.
7 cups of good quality filtered water
1 cup organic cane sugar
5 teabags of organic green, black, or oolong tea
A scoby
1 cup starter tea OR store bought unflavored kombucha OR 1/4 cup distilled white vinegar
Coffee filter or a cut up t-shirt to use as a cover for the mason jar.
Rubber band
Glass bottles with a non-toxic lid. No plastic. Enough for bottling approximately a half-gallon or more if you double the recipe. I save old kombucha bottles or juice bottles purchased at the health food store.
**Recipe yields a half-gallon batch. I usually double the recipe, but I recommend starting out small. Once you get the hang of it and grow another scoby, double the recipe.

Kombucha 101
Scoby is an acronym for symbiotic colony organism of bacteria and yeast. This live little creature looks like a white disc of jelly and before you know it, you'll consider it part of the family. The scoby needs sugar and oxygen for sustenance. In exchange, it produces carbonation, probiotics, and B vitamins as byproducts. A scoby will also produce a trace amount of alcohol, usually less than 1%. It should not affect you unless you have an alcohol sensitivity.

How do you acquire said scoby? My advice is to get one online or from a brewing friend. Do not try to grow one from store bought kombucha, although, I've seen it done on YouTube. I went through 3 batches of tea, and 3 weeks time, trying to grow a scoby and couldn't produce more than a thin fragile layer. I ordered from poseymom on Amazon and paid about $11.00 including shipping. Three days later I received 2 small scobies wrapped carefully in plastic baggies and surrounded in a small amount of starter tea. The live scobies looked perfectly healthy, white in color. It's possible for a scoby to become contaminated with mold. Always inspect the coloring and if you see anything resembling green or black fuzzy texture, throw it out. Over time, tea will discolor the scoby and it will look brownish in color. It will also produce stringy looking matter. This is completely normal and healthy scoby activity.

Poseymom provided a recipe which I found to be too sweet for my liking. I have reason to believe my scoby may have become dormant in transit or perhaps I should have used store bought kombucha for starter tea instead of white vinegar on my first batch, because it was unusually sweet and sluggish to ferment 16 days in. I altered the recipe by simply using less sugar, and my second batch really kicked into gear and perfectly white smooth baby scobies were forming by day 5. You can imagine my excitement after so many failed attempts!

Directions for Kombucha
Before starting, wash all surfaces and materials any water or tea come in contact with. I run all dishes/utensils used, in the high heat cycle of the dishwasher and I spray them with white vinegar and rinse thoroughly. Soapy residue left behind can injure your scoby. Wash your hands frequently. What you don't want to do, is introduce different cultures of bacteria in the mix.

-Heat 7 cups of good quality filtered water in a pan. Do not use distilled water. Do not use alkalized water. Do not boil! Steeping tea in boiling water will cook away all the healthy beneficial properties of tea. Aim for hot to the touch, about 106 degrees. Transfer the heated water to a glass dish. Do not use plastic. Porcelain may be used so long as it doesn't have lead. Avoid metal coming into contact with your kombucha because it can alter the pH of the brew. I use an anchor glass measuring bowl with spout for easy pouring afterwards to steep the tea bags and later impregnate my tea with the scoby.
-Add 5 tea bags per half gallon of water. Steep for 15 minutes. I used 2 organic green tea and 3 oolong tea bags because it's what I had on hand. After further research, I read it is best to use black tea for the first few batches and then switch to green or oolong. Do not use flavored teas or herbal teas as the oils can injure your scoby.
-Add 1 cup of organic cane sugar and stir with a wooden spoon. Remember no metal. Do not use honey, maple, stevia, or other sugar substitution.
- Cover with a plate or lid to avoid contamination and walk away. Let the tea cool to room temperature. Do not skip this step. High heat will injure the scoby. Ask me how I know that! ;)

Starter tea
 If you do not have starter tea from a previous batch, use 1 cup of store bought unflavored kombucha OR 1/4 cup distilled white vinegar.

After the tea cools to room temp, add in 1 cup of starter tea and the scoby. Stir carefully. This will impregnate the tea with the active cultures from the starter tea and help speed the fermentation along. Transfer the contents to a half-gallon mason jar. Cover with a piece of cotton from a clean t-shirt and secure with a rubber band to protect your brew from fruit flies and debris. Your scoby needs oxygen to survive so make sure to use breathable material. Coffee filters or a paper towel work well, too. Place in a dark cupboard for about a week. The longer it ferments, the less sweet and more acidic it becomes as the scoby is eating away at the sugar. Near 30 days, your brew will become like vinegar in acidity and not so palatable. Taste 5 days in by inserting a clean straw and drawing out liquid. Your first batch may be sluggish. Do you like it? If it's too sweet, wait a couple days, taste again.

After the kombucha reaches your desired sweetness, it's time to bottle. When you bottle kombucha, you are using a lid to trap the carbonation. This is when it really fizzes. I keep a variety of glass bottles stored, for this last step. You can bottle as is, or flavor with fruit juices. Use a funnel or make one by cutting off the top of a 2 litter bottle and pour into your glass bottles. If you choose to flavor, save a cup of unflavored kombucha to store your scoby and use as starter for the next batch.

With so many flavorings to choose from, this next step can be loads of fun! I've flavored my batches with freshly squeezed lemon and ginger, compliments of my juicer. I fill the bottom of each bottle with an inch or two of mostly lemon and a little ginger juice. And then fill the remainder with kombucha.

Do not fill to the very top. Leave about an inch of air. Cover tightly with a lid and place back in a dark cupboard for another couple days for a second fermentation. The longer you wait, the less sweet it becomes, as the active cultures continue to eat away at the sugar. Burp your bottles so they don't explode. I heard it can happen so I burp them. Refrigerate before drinking and consume within a month.

I'm learning as I go and I welcome any edits and corrections. Still very much an amateur, I've made 3 successful batches to date but I couldn't wait to share my experience with you. I must admit, this was the most fun and challenging experience I've had in the kitchen thus far.

Broccoli Slaw Summer Salad


In the produce section of the grocery store, exists one of my secret weapons in the kitchen. Allow me to introduce you to, broccoli slaw. This package of wonder is so versatile and so fun - I have served it various ways but this is by far my favorite. With a refreshing blend of citrus, this mix of fruit and veggies will give you a cleansed feel good feeling. The taste is light, crispy, and delicious. Let's get to it!
What you will need:
A package of broccoli slaw. Looks like this and it's usually placed next to the salad kits near the produce.
Half a red onion
Tomatillos 2 (the funky looking green tomatoes with the green leafy peel around them)  
Roma tomatoes 2
The freshest cilantro you can find
1-2 tbsp. Raw honey or sugar to taste
Lemon 1
Lime 1
Cara-Cara Orange 1 (It just so happens this is the kind of orange I had in the fruit bowl. A regular orange or tangerine will do) 
Mango 1
Ground ginger
Salt and Pepper
Step 1
Rinse your broccoli slaw and your veggies.  I used 3/4 of the package in a medium size bowl. Chop the tomatoes, tomatillos and onions. Salt and pepper to taste.

Step 2
Juice your citrus in a separate dish and add some raw honey or sugar. Taste to be sure it's at your desired sweetness. Season with cinnamon, and ground ginger. Stir together to make a homemade  healthy salad dressing, without chemicals or preservatives.
Step 3
Pour the dressing on the salad, coating generously throughout. Toss and refrigerate for a couple hours, letting the flavors marry and work their magic. Add a handful of fresh cilantro just before serving to prevent wilting.
As I stared at my colorful creation, I happened to glance over at a lonely mango in the fruit bowl. Oh, yes. The "I know I have something good and now I have something extraordinary" kind of feeling sets in! In the past, I've had success with pineapple, golden kiwi, pear, sweet peppers...this dish welcomes diversity. For the brave souls out there, may I suggest some jalapeƱo and red pepper flakes? I occasionally appreciate a good kick, but tear producing spicy is not really my "thang". Firm fruit hold up the best - I must say though, the star here, hands down is the tomatillo. With a unique sweetness and acidity, tomatillo ties the mix all together.

Homemade Sweet Pepper Salad Dressing


When I started my quest to eat as clean as possible, I began to read labels. The more I read the more I learned these "low fat" and "healthy" branded condiments are filled with soy, corn, and high fructose corn syrup. It's a GMO cesspool. Okay, maybe that's dramatic but even the organic brands contain canola oil. Though organic, canola is still highly processed. My mother taught me "nunca te des por vencida", meaning "never give into defeat".  One day, I felt brave and made my own salad dressing. Once I got the hang of it, my eyes were opened to endless possibilities. What can be more fun than combining different herbs and vegetables in blender and making a new discovery? For the most part, I use Greek yogurt as a base and add to it.
1/4 cup Greek Yogurt
2 mini red peppers
Dash of ground mustard
Dash of Cayenne
Salt and pepper to taste
With the help of a NutriBullet, blend the above ingredients until smooth and creamy.
Do not be fooled, this may look like French dressing, but tastes completely different. The flavors here complement the Tuna For 1 recipe beautifully. A little kick from the cayenne, and the sweet juices from the peppers are a perfect marriage. YOLO, so experiment. It pays off!!

Tuna for 1, Por Favor!


Often I find myself looking for a quick meal while the kids are in school and the hubs works away. My solution? Tuna for 1. This recipe can be easily doubled or tripled to feed the family.

-A package of Wild Albacore tuna. I like Wild Planet. No added ingredients - just clean tuna.
-1/2 English cucumber
-Homemade Sweet Pepper Salad Dressing or your favorite salad dressing
-Squeeze of lemon
-Fresh basil and sun-dried tomatoes for garnish
-Avocado or fruit if desired

Prepare your tuna in a bowl with your favorite salad dressing and a squeeze of fresh lemon. Halve and hollow out the cucumber with a spoon. They look like cute little cucumber canoes, don't they?

Spread the tuna on top and garnish. I had fresh basil and sun-dried tomatoes on hand, but olives, parsley, or sliced fruit would work too. Serve with avocado. Because avocado. Nothing more to say about that!

If cut into individual squares, a doubled or tripled recipe can make a unique and health-conscious party tray. Be that person that brings the veggies and own it!! Trust me, they will thank you for it after the first bite.

Plantain Pizza Crust Recipe

Every now and then I enjoy dropping a culinary bomb on the family - anything with an explosion of flavors and textures that leave them singing my praises. My latest and greatest: The Plantain Pizza **Warning**Disclaimer**I'm the kind of cook that has the inability to follow recipes; therefore all measurements below are guesstimates and may need to be tweaked at your discretion.** Ingredients: 2 plantains: 1 yellow (ripe) 1 greenish-yellow (not so ripe) Coconut oil Cashew butter Water Your favorite pizza sauce Your favorite pizza toppings Step 1: Peel your plantains and slice diagonally. Heat some oil in a skillet on medium-high and add your plantains. Toast them on each side until they're nice and golden. You don't want to cook them all the way through because they will be baked later. Remove and place on a paper towel and let cool. If you are familiar with Latin American cuisine, you're basically making "maduro frito" or "madurito frito", if you're Nicaraguan. My mother used vegetable oil back in the day, but I find coconut oil to work just as well, and it's much better for you.

Step 2:  Place your cooled plantains in the food processor. This is where it gets a little tricky, and depending on the ripeness of each plantain, you may need to modify. Pulse until the plantains begin to resemble dough. If the batter looks too crumbly, add some cashew butter and/or water. You want to form a ball of dough that can be rolled out. The cashew butter (peanut/almond butter work well too) and water help bind the plantain together. Add in 1 tablespoon at a time, pulse and analyze. I used 2 tablespoons of cashew and 2 tablespoons of water and my "dough" was the perfect consistency.

**If your plantain dough is sticky, do not panic. Coat your fingers with oil to work it**

Step 3: Carefully remove the dough from the food processor (don't cut yourself on the blade - not that it ever happens to me or anything ) and knead it. Work it. Give it some love till it's nice and smashed together. Place in the center of a pizza pan. Use a rolling pin and roll as evenly as possible. I like a very thin crust. Bake on 375 for 10 minutes. You may also use a cookie sheet or pizza stone. Depending on the size of your pan and thickness of the crust adjust cooking time.

Step 4:  Remove from oven and add your favorite pizza sauce and toppings. I poured half a jar of Wild Oats organic pasta sauce into the food processor. I added 3 garlic cloves, pepper, and a couple drizzles of agave because I like it sweet. I blended all together for a few seconds. Generously coat the crust. For toppings, I grated some grass-fed white cheddar cheese and parmesan. I added artichoke hearts, sliced deli chicken (I like the Harvest brand) and fresh basil. I put it back in the oven for about 5-7 minutes until the cheese melted. Check out those crispy golden edges...YUM!! I ate the first slice before I could get a picture...sorry. It's so good, ya'll!!
